Merry Christmas from the Valley! It’s been a busy lead up to Christmas! We had the Cat Haven Christmas Market, gift wrapping teams at Belmont forum, some very hot weather and the launch of our Christmas Hay appeal.

These Grinchy cookies are great for gifting (or nibbling yourself) in the lead up to Christmas.
Ingredients
- 1 cup of soft vegan butter substitute
- 2 vegan eggs made with Orgran Egg Replacer
- 1/4 cup of icing sugar
- 1/2 cup of sugar
- pinch of salt
- 2 teaspoons of vanilla extract
- 1 tablespoon of cornflour
- 2 1/4 cups of plain flour
- Green and yellow food colouring
- Small red hearts (those used for decorating cakes). We used vegan 'Over the Top' brand 'Bling Red Hearts' available at Spotlight stores
- Desiccated coconut
Method
- Mix butter substitute and two sugars together in a bowl (sift the icing sugar first) until they have a creamy consistency.
- Add the eggs, vanilla and salt and mix.
- Then add the food colouring. Combining the yellow and green will make a brighter green, like the coat of the Grinch. Add colouring to the batter and stir until you reach the desired colour. If it is a little dark, don't worry as adding the flour will lighten the colour further.
- Sift in the cornflour and flour. Stir well.
- Prepare a baking tray with non stick paper. Make small balls of the green batter - approximately 4cm in size - and roll these in the dessicated coconut. As there is no rising agent in the recipe they will stay the same size. Flatten the balls on the tray and then add small red hearts.
- Bake in an oven at 160 C for approximately 10 to 15 minutes or until the coconut begins to brown and the biscuits feel firm. The shortbread will harden as it cools.

The days leading up to Christmas this year were hectic and hot, and some unexpected goodbyes have been tough on morale at this time of year. As always, amongst the challenging times have shone some very kind hearts, and a special thanks goes out to Yas and Jade for helping a newborn lamb find safety late on Christmas Eve, while Mark collected a new little ewe, Eve, from the pound. Little Eve is suspected to have fallen from a sheep carrier and found herself living life roadside until captured. She’s scared, skittish and currently quite inconsolable, but thankfully appears uninjured. While Eve is still overwhelmed with all she’s been through, we hope time and TLC will bring her comfort.

Christmas is a time of hope, and
we are thankful for everyone who makes a difference to the little lives that
otherwise would fall under the radar. Christmas wishes to all the kind hearts
out there - we couldn’t do it without you.
It’s incredible that Christmas is almost here!
The Sanctuary has been a flurry of activity with fundraising, new animals and keeping every one cool in the summer heat.
December saw the arrival of four new lambs – Heather, Titan, Loretta and tiny Jay. It’s been our busiest summer for lambs so far!
The team attended the Christmas Festival event at the Vegan Artisan Market, raising an incredible $1200, with the Christmas socks and bake sale in particular being very popular.
The Sanctuary’s new website and online shop was launched in December, giving Sanctuary supporters some great Christmas gift ideas while helping the animals.
We hope all our Possum Valley friends have a very Merry Christmas and we look forward to sharing 2024 with you!

On the 18th of December we held a fundraising bake sale. We would like to thank everyone who attended and supported the sale. We raised $708.00 which will go towards caring for the over 200 animals and birds in our care.
