Vegan Recipe - Date, Weetbix and Chocolate Cake Slice


This is a moist and delicious cake-style slice. You can bake the slice in a larger pan (for a thinner slice), or select a smaller pan for a thicker, cakey treat.

Ingredients

(These amounts make a larger sized slice, halve the amounts for a smaller size)

- 8 Weetbix crushed finely

- 1 cup of sugar

- 2 tablespoons of butter substitute - melted, we used Nuttelex

- 2 cups of chopped dates - soak in some boiling water for ten minutes beforehand to soften the dates. Discard the water.

- 2 teaspoons of baking soda

- Another 2 cups of boiling water

- 2 cups of self raising flour

- The equivalent of 4 eggs using Orgran egg substitute

- Vegan Melting Chocolate - we used Sweet William Milk Chocolate Buttons

Method

- Combine the crushed Weetbix, sugar and soda.

- In a second bowl, combine the egg substitute, melted butter, boiling water and dates, and mix.

-  Mix the two bowls of dry and wet ingredients together. 

- Add the self raising flour. Mix well.

- Line your slice tin with baking paper and pour in the batter. 

- Bake your slice for approximately 45 minutes. The cooking time may vary depending on the size of your pan.

- When the slice has cooled, ice with the melted chocolate and set in the fridge.

- We left some baking paper on the bottom of the slice to keep in the moisture until eating.

New Arrivals at PVAS - Puddles & Splash

 

Puddles and Splash arrived at WA Wildlife as tiny ducklings. They had been found in a suburban garage and dropped off at the wildlife centre. Little was known about the bright yellow siblings, but being non-native ducklings they needed a new home. They were soon on their way to the Sanctuary with volunteer Jemma.



Puddles and Splash love running about the kitchen, eating spinach and doing zoomies down the hall. They are growing quickly, and will be taking trips outside when the weather warms up.

New Arrival at PVAS - Nimbus the Lamb


In late May we were contacted about a tiny lamb with a lame back leg. His name was Nimbus, and he was suffering from progressed joint ill. Nimbus was soon booked into The Animal Hospital, where he was sedated and his leg joint assessed. Sadly, further investigation revealed the infection had reached the bone. Leg amputation was the only option to prevent spread of the infection, so Nimbus was booked for a full leg amputation.



 

 
Little Nimby bounced back surprisingly well from his procedure, but two weeks later suffered a stomach upset, which set his recovery back markedly. Despite all he had been through, Nimbus was brave and patient with all of his medications and treatments, and after another two weeks, again started to put on weight and take his bottles with enthusiasm.






Nimbus is now ten weeks old and we hope he continues to grow stronger with his best friend Bunny Lamb!


 

New Arrival at PVAS - Duffy the Donkey


In late June we welcomed beautiful big Duffy the Donkey! Standing at 12.2 hands, Duffy is a huge wild born donkey from the north west of WA, who found himself rounded up with the cattle he had befriended on a station. He was sadly ear tagged and marked, before being transported with his bovine friends to the sale yards.


Fortunately Duffy was seen at the yards by a kind couple, who took him home and cared for him for over nine years. A change in circumstance led Duffy to another loving home, where he was further trained and given lots of love and attention, before making his way to the Sanctuary to join new donkey friends, Albert, Victoria and Spud.

 

Duffy may be big, but he is very quiet and gentle, loving nothing more than a back scratch or brush.  

Duffy loves company and follows the volunteers as they work!
