PVAS Christmas Bake Sale 2021

On the 18th of December we held a fundraising bake sale. We would like to thank everyone who attended and supported the sale. We raised $708.00 which will go towards caring for the over 200 animals and birds in our care.

Carols in the Valley 2021

 

A big thank you to everyone who supported ‘Carols in the Valley’! It was a beautiful night in the Valley, with attendees enjoying the incredible voice of Jane Hebiton as the sun set over the Sanctuary.


 

Everyone loved joining Santa to meet his two deer Elen and Freya, and Victoria the Christmas Donkey enjoyed her evening accompanying Santa on his travels around the event paddock.

Vegan Recipe: Pastry Christmas Wreath

 

Ingredients:

- 1 pack V2 Mince 500g (available in Australia at Coles Supermarkets)

- 2 tablespoons nutritional yeast

- 2 tablespoons BBQ sauce

- 2 tablespoons bread crumbs

- 2 sweet potatoes, boiled and mashed

- 1 cup cooked white rice

- 2 teaspoons sesame seeds

- 8 sheets vegan puff pastry

- Bay leaves, parsley sprigs and cherry tomatoes to decorate

Method:

- This recipe makes two separate fillings for the wreath rolls, one with mince, the other is sweet potato.

- For the first filling, mix the mince, BBQ sauce and bread crumbs together in one bowl.



- Then mix the sweet potato, cooked rice and nutritional yeast in another bowl. 

- Spread each mix thickly on a separate sheet of pastry and roll similar to a Swiss roll.




- Cut the rolled pastry into slices approximately 2 cm wide. Arrange rolls on a lined bake tray, interspersing mince rolls with sweet potato rolls.

- Sprinkle rolls with sesame seeds and bake at 180C for approximately 45 minutes or until golden brown.

- Garnish with bay leaves, parsley and tomatoes.  The wreath is best served straight from the oven with tomato sauce.



 

 

A Christmas Treat: Vegan Wagon Wheel Slice

Ingredients:

- 3/4 cup butter substitute, we use Nuttelex Baking

- 1/3 cup caster sugar

- 1 1/2 cups plain flour

- 1/3 cup self raising flour

- 1 egg - replace with Orgran or McKenzies egg replacer

- 1/2 cup raspberry jam (room temperature)

- Dandies Marshmallows

- 1 cup dark chocolate chips - we use Sweet William

Method:

First make the shortbread base:

- Beat the butter and sugar together.  

- Add the egg substitute, then the flours.

- Bake the base for 20 minutes on 180 C or until the pastry is slightly browned on top.

Topping:

- While the pastry is warm, spread the raspberry jam on top. 

- Chop the Dandies Marshmallows in half and lay the halves cut-side down on top of the jam. Cover the entire slice with marshmallow pieces.

- Place the slice back into the oven until the marshmallows begin to turn a golden colour.

- Remove the slice from the oven and cut into pieces while it is still in the tray and warm. Be careful as the marshmallows will be sticky and hot.

- Let the slice cool. Melt the dark chocolate chips and pour a thin layer over the top of the slice.

- Place the slice in the fridge until the chocolate has set.  

This is a delicious, sweet treat for your Christmas table. Enjoy!
