Holiday Recipe - Festive Chia Puddings


Festive Chia Puddings

Looking for something easy, fast and healthy to tide you through the busy holiday season? You can’t go past these quick and easy puddings, ideal for a hot summers day!

Ingredients (makes 2)

- 1 cup of chia seeds

- 2 cups of reduced fat soy milk (or other plant milk of your liking)

- 2 tablespoons rice malt syrup

- cherries

- 2 tablespoons of peanut butter

Method

- Grab two empty jars with lids, add half a cup of chia and one cup of milk to each jar. Put the lid on, shake well, and leave in the fridge overnight.

- The next day, top the thickened puds with a tablespoon of rice malt syrup and peanut butter, then a small handful of cherries. Best eaten straight from the fridge!
