Recipe: Vegan Vol-a-vents

Today's post is a delicious vegan recipe, by Chris R.
Vegan Vol-a-vents



Ingredients
*Cheese and chive filling:
- 2 cups of your favourite soft vegan cheese (such as 'Geoff's cashew cheeze')
- 2 tablespoons of finely chopped chives
- bunch of fresh parsley (to garnish)
*Bruschetta filling:
- 1 tub of vegan cream cheese
- 1/2 red salad onion, diced
- 4 Roma tomatoes, chopped into 1cm pieces
- 1/2 tblsp balsamic vinegar
- cracked pepper, to taste
- bunch of fresh parsley (to garnish)
Method
*Cheese and chive filling:
- Mix cheese and chives and pipe into empty cases. Garnish with small sprigs of parsley.
*Bruschetta filling:
- Mix together onion, tomato, vinegar and pepper.  Place a spoon of filling in each case and then pipe cream cheese on top. Garnish with small parsley sprigs.
