Recipe: Meatless Balls with Fettucine

 Ingredients
-2 brown onions, chopped
-2 carrots, chopped
-4 teaspoons of crushed garlic
-1 cup of red wine
-4 cups of vegetable stock
-4 tins of diced tomatoes
-2 tablespoons of vegetable oil
-2 packets of Gardein Meatless Meatballs, cooked
-500g of fettuccine 

Method
-Sauté the garlic, chopped onions and carrots in oil until soft.
-Add red wine and cook for a further five minutes.  
-Add cooked meatballs, tinned tomatoes and stock. 
-Bring to the boil, stirring occasionally.  
-Add 500g of fettuccine, cooking on low heat until pasta is al dente, stirring gently while cooking.
-Serve with a sprinkle of chopped fresh parsley and cashew cheese.

Serves six.
