Recipe: Possum Valley Fruit Peacock

Fun to make and healthy too, any fruit can be substituted for the ‘tail’ skewers depending on season.

Ingredients
-Pear
-Carrot
-Kiwi fruit
-Blueberries
-Strawberries
-Grapes
-Two raisins

Method
-Using 14 bamboo skewers, arrange fruit in a pattern on each as shown, ensuring all skewers are the same.


-Cut the pear in half, using half as the body and attach raisin eyes and a piece of carrot with cream cheese for the beak.
 
-Arrange the skewers, radiating from the pear as a ‘tail’.

-Refrigerate until ready to serve.
